Brut from Pierre Gimonnet & Fils symbolizes the style and the philosophy of this champagne house. It’s a Brut Blanc de Blancs characterized by its energy, its finesse and its ethereal touch, and made exclusively from a blend of five harvests of Chardonnay from the Premier Cru classified terroir of Cuis; a terroir situated in the Côte des Blancs, probably the most renowned in all of Champagne.
Olivier and Didier Gimonnet present this champagne
« With this non-vintage Blanc de Blancs, our objective is to make a young, extremely fresh champagne without developing excessive vivacity on the palate.
The blend therefore has to be round and balanced right from the moment of bottling, and to achieve this we take care to mix the wines of the current vintage with reserve wines from several different vintages, only very subtly!
In order to get this fundamental and extremely delicate operation right, we decided to keep all our reserve wines in bottles on fine lees, rather than in tanks, which allows us to blend with wines of over two years old which have retained all their fresh qualities.
We are almost certainly the only winemakers in Champagne to use this method. »
